Prawns Parma ham and spinach~five minute meal made from leftovers.
It’s been a beautiful and busy weekend so just grabbed some leftovers from the fridge and quickly fried them in coconut oil. The whole thing took five mins from prep to plate.
Ingredients:
Serves one.
Half pack of king prawns
Cooked baby potatoes halved
3 slices of Parma ham (no nitrates)
One red onion
Two spring onions
Half a red pepper
Handful of spinach
Handful of fresh coriander and basil
Half teaspoon of garlic granules
Half teaspoon of smoked paprika
Salt and pepper
Tablespoon coconut oil
Method:
Fry leftover cooked potatoes, onion, pepper and Parma ham with the paprika and garlic for two minutes then add the cooked prawns, spinach and spring onion, cook for a further two minutes, finally add the basil and coriander about 20 seconds before serving. 😄 Belissimo!!!🌈
