Roasted butternut squash and sweet potato soup
This is a nice easy superfood winter warmer recipe, which can be done with minimum effort, if you have mobility problems, are ill or don't have much time...
Ingredients: Serves 4
One butternut squash
One sweet potato
Six cloves of garlic
Litre of chicken or veg stock
Few pinches of onion granules
Drizzle of olive oil
Four pinches of Himalayan sea salt
Two pinches of black pepper
Couple of teaspoons of fresh thyme
Handful of Parsley
Cut butternut squash in half and the same with the potatoes leek and onion, drizzle with olive oil and sprinkle the onion salt on, cook butter nut squash for 15 mins in oven at 200,
then add the onion leek and sweet potato and cook for a further 20-30 mins until soft. Scoop out the potato and butternut squash and add to the hot stock with the other ingredients apart from the parsley, simmer for 15 mins and wizz with your hand blender until smooth, add parsley to serve....enjoy!
